Fresh Summer Salad

Broccoli salad

Quick and easy summer salad for lunch or dinner!

It is so satisfying and you can indulge totally #guiltfree.

What you need:  (enough for 2 people)

1 head broccoli

1 pack bacon (smoke free)

1 slice Feta cheese

1 handful Mozzarella cheese

half a cup Raisins (soaked in water for 30 minutes)

fresh French chives

3 tablespoons Kefir / Full Cream Preservative Free Yoghurt (for the dressing)

20ml fresh squeezed lemon juice

5ml mustard

6 Peppadews

1 Avocado

1 handful Shredded Chicken (optional)

5ml Herbal Salt

5ml Black Pepper

5ml Lemon Pepper

Method:

Brake the broccoli into smaller pieces and steam for 5mins.  Drain well and cool down immediately with ice cubes or in the freezer to preserve the crunch texture

Fry the sliced bacon in a pan with 5ml olive oil.  Cool down and set aside

Slice all the ingredients in bite sizes

Drain the raisins and pat dry with paper towel

The Shredded chicken, I have used from left overs of a full chicken roasted in the oven.  You could use a organic free range chicken breast instead. (optional)

Dressing:  Mix the yoghurt / Kefir with 5ml olive oil, mustard, lemon pepper, black pepper and herbal salt. (I mix the shredded chicken into the dressing for a more moist texture)

Add the broccoli to your salad bowl and drizzle with lemon juice.  Then add all the other ingredients.  Scoop up the salad dressing.
